Hey now! It's not that I can't cook, it's just that I'm a bum. I have a scrappy to do list that's about 10 miles long! That's my story and I'm sticking to it :)

How do you mean, Jen? Boil rice in a large amount of water??

My MIL bought me a rice cooker years ago and I will never be without one again! One great invention!

YES! supposedly you can boil it like pasta in a bunch of water and then strain it and put it back in the pan with a lid for like 5 minutes to finish! Crazy huh? I'm gonna try it tonight...i'll take pics!

I got a rice cooker a couple of Christmas ago from our kids...its the BEST way to cook rice!
($20 at *alMart!)

I'm testing this method RIGHT NOW! had to logon to remind myself how to do it! :) i'll let ya know how it turns out---i'm trying it with Risotto, so thats pretty daring---

So, how'd your rice turn out? I made some mexican rice last night with our tacos and it was delicious, just like going to los dos amigios :o)
I sauteed diced onion and garlic in my pot and added the rice to brown it, then I didn't have chicken stock so i added water with a little El Pato and mixed some tomato paste (about tbsp. ) with water and added that and salt, cooked rice for 20 minutes and it was perfect! easy peasy ;o)

Ohhh....that sounds good! Mine turned out pretty good, but I think I boiled it for a few minutes too long---was a touch mushier than i would have preferred, but I think Risotto would be the hardest rice to get right anyways...

My dad taught me how to cook rice if you don't have any measuring cups handy or just don't like to measure ingredients. lol!!

You put your rice down in the bottom of the pot and place your index finger on the very top of the rice and then add water until the water line comes up to your first knuckle. Comes out perfect everytime for me!
