I have been canning FOREVER and I think the best basic book to start with is the Ball Blue Book. Put out by Ball Co., the makers of jars and lids for canning. It is available at stores in the dept. where the jars are sold; book clubs; and I am sure at the Ball website. They update it occasionally to keep up with the current FDA standards so the cover may be different than your Aunt Minnie's, but I am still following the one I bought in 1880 (or thereabouts). I think Martha Stewart has a book on the subject too but I am not sure. Your local Extension Service will have free publications just for the asking, and advice is available from them by phone. When you buy a pressure canner (and you will need one for veggies) the book that comes with it will have basic recipes and TIME CHARTS (important) if you cannot afford a Blue Book. It is most helpful to fine someone who has canned a lot to help you get started... and to help you get over the first time jitters. A first timer should start with pickles. Easy and safe... and you will get to know how a seal on the jar should be when you are finished. You will soon find out which foods are better frozen and which ones are better canned. Have fun!

The weather has been perfect the last weeks, so my mum nearly started to panic when she saw how many plum's, strawberry and so on she had in the freezer from last year. Last week we spent a complete day with making strawberryjam and redcurrant juice. We only stopped because we didn't have any empty jars and bottles left. Its really so easy.

Teri, It's so gratifying to open your cupboard and pull out a jar of something you canned especially in the middle of winter!! It brings back all the memories you had of Summer and the picking and canning fun you had, plus it tastes so good :o) You should give it a try, I bet you'll like it!

Funny how this came about, as last week huby thinks we should lern how to can. I am not takig it serious because I dont know how. I do have jars, canning pot kit thing from my deceased grand parents.
