Homemade Vegetable Beef Soup
Why have I gone YEARS without making this easy and yummy soup? I'll tell you one thing...I won't go that long again!
Here's my "toss it all together" recipe:
1.5 lbs ground beef
1 beef soup bone
**brown beef and soup bone in large soup pot (mine was an 8qt)
Add enough water to fill pot about half full. Add random vegies and beans etc. I just started grabbing a bunch of stuff I had on hand or half full bags in the freezer etc. Here is what I tossed in:
-6 small russet potatoes peeled and cubed
-2-3 handfuls of baby carrots chopped
-2 stalks of celery diced fine
-half small onion (I use the cheese grater instead of chopping it super fine)
-quarter of a red cabbage chopped small
-one can kidney beans and liquid
-one can corn no liquid
-partial bag frozen peas
Simmer on low for 3 hours and DINNER is served. Delicious!

Sounds scrumptious!! When are ya making me dinner?? ;o)
I have a beef barley soup recipe I got from my Aunt that I really like and it's a lot like this, but you add 1/2 cup or so of pearl barley and a can or two of diced tomatoes and some ketchup (I know sounds weird, but it turns out so yummy!!) and a very small amount of seasoning salt. With all the rain we've had in the last couple of days, I'm ready to eat soup again!! I know what I'm making tonight!! Thanks Jen :o)
